I\'d like to either travel from Zagreb to Sarajevo or from somewhere along the Croatian coast to Sarajevo. The train service seems impossible, but are there any alternative services such as bus?

Hi and welcome to rail.cc,
unfortunately the day train from Zagreb to Sarajevo is currently suspended. No date is known when it will run again, but it can happen at short notice - depending on the involved railway companies finding an agreement.
In the meantime you can (have to) travel by bus; there are several direct buses between the cities each day. Have a look at [ux]http://voznired.akz.hr/[/ux] for detailed schedules.
If you want to travel to Sarajevo from the coast, best option is to travel from either Split or Dubrovnik by bus. If you go for this option you might also think about making an intermediate stop at Mostar.
