WE will spend 7 days in Munich for Oktoberfest and do both local and day trips from there then we travel to Copenhagen to return home, what train ticket combo works best for. Thanks in advance for your help.

Best option probably is to buy a "Sparpreis" from Copenhagen via Hamburg to Munich at [ux]https://rail.shop/bahn[/ux] (and return).
For local day trips around Munich best option are ticket such as "Bayern Ticket" which you can buy locally at ticket machines. [ux]https://www.bahn.com/da/view/produkter/regionalt/regionale-dagsbilletter.shtml[/ux]
This ticket includes all local trains plus most public transport.
