This is true, but as long as you are flexible it shouldnt be too much of a problem
We only had a problem twice, once trying to book the paris to rome sleeper, which was full for interrailers even though we were booking it a couple of days in advance. In the end we had to take the train the following night, so no big deal really.
This is also true in holland, on the Thalys train to paris, which was also full for interrailers, but we were told we could get a slower train to brussels and then use the Thalys to Paris.
I am not sure about other countries as we never had a problem
