for the most high speed trains you can make a reservation up to 10 minutes before departure.
the same for night trains... often you can even ask directly at the train for a bed or chouchette... if something is free, you can buy it... :)

I have one last question involving this- are there often seats available if you reserve just 10 minutes before departure- or is it a risk not worth taking? (i ask this because i am looking to go interrailing in July with 2 other friends- which is obviously a busy time!)

some times there aren't seats in nigth trains so check before.

also on the French TGV it is sometimes hard to get a seat in peak times !
