depends when you are going/how far in advance you can book. The only train I have ever been turned away from was paris-rome, there are a limited number of interrail places available and it was in August and is a very popular train. All of the others we had no problems getting reservations for, so, speaking only from personal experience you should be fine

I would also like to add that Paris is the only place I have had trouble - I wanted to go to Lille Flandres and had to wait four hours for the next available train! But everywhere else has been fine. Also, common sense, but you might want to leave an hour or so to actually get your reservation as queues can be very long.
