I plan to inter rail during the months of June and/or July but I obviously know that it will be very busy. At the moment I have been checking out some hostels and there prices are around 15euro for a night in a large dorm which is good for me. However, if we plan to book on a whim while we interrail (i.e. book for one hostel while at our previous hostel), will the prices be changing since it is at such short notice and the summer?

hej ... :)
in central europe prices normally do not change for a hostel room. so it doesn't matter if you book your hostels in May or during your tour one day before arriving there.
but keep in mind that in the big cities hostels are often full - for dorms: you will often find a place ... but not for 2/4/6 person rooms.
it is always hard to find the balance between early booking and staying flexible and not to be fixed on dates and hostels ... :)
