I am looking to reserve two seats from Vienna to Venice, but when I buy the ticket it says that it would have to be picked up from an Italian train station, and Vienna is not in Italy so I am unsure how to reserve the seats.

You can simply buy the seat reservations locally at a station - in Austria or another country in central Europe.
An online alternative would be [ux]https://rail.shop/acprail/reservation/[/ux]; or you phone up Austrian Railways at +43 5 17 17 and collect the tickets locally from a ticket machine.
